Lemon Blueberry Scones

2 cup flour

3 tbsp sugar

1 tbsp baking powder

3/4 stick butter (cold, diced)

1 tbsp lemon zest

1 1/2 cup blueberries

1 cup cream (or 1/2 cream and 2 eggs?)

1) Combine flour, sugar, baking powder, and diced butter.

2) Cut/Smash butter until smaller than chocolate chips.

3) Add lemon zest and blueberries and mix.

4) Create volcano hole and add cream (or cream and eggs).

5) Gently/Loosely combine, just until most sticks together.

6) Transfer to lightly floured surface and press together just enough to make a single large square patty ~1″ high.

7) Cut into triangles (like a pie) and transfer to parchment covered tray.

8) Bake at 400 for 20min or browned.
