1 (19 oz) can black beans
1 diced cucumber
grape tomatoes (enough that, when cut in half or quartered, equal the volume of diced cucumber)
1/2 yellow bell pepper (optional)
3 tbsp diced red onion
1 tbsp chopped fresh basil (1/2 if dried)
1 tsp oregano
1/4-1 tsp cayenne pepper (depending on audience)
1/4 tsp garlic salt
1/8 tsp sea salt
2 tbsp olive oil
1 tbsp balsamic vinegar
1) Drain and rinse black beans.
2) Dice all vegetables and place in medium-sized serving bowl. Add beans, spices, oil, vinegar and lemon juice. Stir until well combined.
3) Serve immediately or wait several hours for flavored to combine.
