Mommy’s Apple (and Blackberry) Crisp

Apples only:

8 crisp apples (preferably tart)

2 tbsp fresh lemon juice

1 tsp vanilla

1 tsp cinnamon

1 tbsp brown sugar

Apples and Blackberries:

4 crisp apples (preferably tart)

2-3 cup blackberries (or 2 cup blackberries and 1 cup raspberries)

2 tbsp cornstarch

1 tsp cinnamon

2 tbsp brown sugar


3/4 cup quick oats

1/4 cup rolled oats

1 cup flour

1 tsp cinnamon

1/4 tsp salt

3/4 cup brown sugar (less 1 tbsp)

3/4 cup butter

1. Core and dice apples in small chunks (~1/2 inch by 1/4 inch) as you would for apple pie in to a large mixing bowl.

2. Sprinkle lemon juice, cinnamon, sugar and vanilla over diced apples and mix until the apples are evenly coated.

3. Place in a 9×13 inch baking dish/pan. As best you can, arrange apples so that they lay evenly on the bottom of the pan.

4. In a medium sized mixing bowl combine oats, flour and spices.

5. In a smaller bowl, in the microwave, melt the butter with the sugar until just melted. Kneed together with your hands until butter and sugar lumps are removed. Pour the melted mix over the oat mixture and kneed together until well blended.

6. Crumble and sprinkle topping over the apples, covering evenly. Press down in to the apples until the surface is flat.

7. Cover with tin foil and bake at 375° for 30min (or until liquid bubbles at the bottom of the pan). Remove foil and bake for another 20-30min uncovered to harden up the oats.
