Aunty Darlene Unchulenko’s Chocolate Zucchini Cake

1 cup margarine (try 3/4 cup)
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk or buttermilk
1 1/2 cups flour
4 tbsp cocoa
1/2 tsp salt
1 tsp soda
1 tsp cinnamon
2 cups finely grated zucchini
1/2 cup chopped walnuts (optional)

1) In a medium-sized mixing bowl, blend together margarine and sugar. Add eggs, vanilla and milk.

2) In a separate bowl mix together flour, cocoa, soda, salt and cinnamon. Add to the wet mixture above and blend.

3) Stir in grated zucchini (and walnuts, if desired).

4) Pour into greased and floured 9 x 13 inch pan. Bake at 350° for 40-50 min.
